Ninh Binh’s food scene is local Vietnamese with a few specialties unique to the province. The tourist restaurants in Tam Coc serve adequate Vietnamese food at slightly elevated prices; the better eating is at local restaurants in Ninh Binh town or at the guesthouses that cook dinner.

Regional specialties

Thịt dê (goat meat): The signature Ninh Binh dish. Goat is raised in the limestone hills around the province and appears on menus in several forms: dê tái chanh (goat meat cured in lime juice, served raw), dê nướng (grilled goat), dê hấp sả (steamed with lemongrass), and in hot pots. The meat is lean and slightly gamey. Goat restaurants are clustered along the road between Ninh Binh town and Tam Coc.

Cơm cháy (crispy rice): This is the dish that defines Ninh Binh. The bottom layer of cooked rice is dried and deep-fried into a large, flat golden cracker, then served with a pork or mushroom topping. The texture — crunchy rice with tender topping — is the point.
