Ninh Binh Food Culture: Com Chay, Thit De and What Makes the Province Unique

Ninh Binh does not have the food reputation of Hanoi or Hoi An, but the region has two genuinely local dishes worth travelling for: com chay (scorched rice cakes) and thit de (goat and mountain deer dishes). These are not found in the same form anywhere else in Vietnam, and both pair impeccably with the rice wine (ruou can) produced in villages across the province.

Ninh Binh Specialities

Com chay: The definitive local dish - scorched rice cake, fried hard in lard until the exterior forms a golden-brown crust somewhere between a rice cracker and a thick slice of bread. Served with mushroom and meat stir-fries piled on top. Every visitor should try it at least once. The mushroom and pork version is the standard order. Budget approximately VND 90,000–150,000 per person including rice and stir-fried sides as of 2026.

De nuong: Grilled goat marinated with lemongrass, galangal, and fermented shrimp paste. Always served with sesame salt (muoi vung), fresh herbs, and rice paper for wrapping. The goat sourced from Ninh Binh’s karst highlands is leaner and more gamey than lowland pork. Expect to pay VND 160,000–250,000 per kg for grilled preparations as of 2026. De xao lan (goat in lemongrass and coconut milk) and de tan (goat simmered with Chinese medicinal herbs) are the other key preparations.

Mien luon: Eel glass noodle soup - thin glass noodles in a clear broth with sliced, crispy-fried eel on top. A northern Vietnamese dish found across the region. Approximately VND 50,000–70,000 per bowl as of 2026.

Banh cuon Ninh Binh: A local version of the steamed rice rolls, filled with minced pork and wood ear mushroom, served with nem chua (fermented pork sausage) as a side. Found at morning stalls near Ninh Binh City market.

Ruou can (rice wine): Thick, slightly sweet rice wine drunk through a communal bamboo straw from a clay pot. VND 20,000–30,000 per glass at restaurants, VND 80,000–150,000 per 0.5L bottle to take home. The goat and rice wine combination is the defining Ninh Binh meal.

Ruou de: A specific goat-infused rice wine served at de (goat) restaurants. Lighter than ruou can, usually priced at approximately VND 25,000 per glass. Pair it with de nuong.

Practical Notes

Ninh Binh City vs Tam Coc: The two centres are approximately 8km apart. Ninh Binh City has a rougher, more local dining scene where com chay and de restaurants operate. Tam Coc has more English menus and higher prices for broadly similar food. The Tam Coc tourist strip does not do the signature dishes well - com chay and goat restaurants are worth the short journey into the city.

Getting there: A xe om (motorbike taxi) costs VND 50,000–80,000 one way; a Grab car is typically VND 55,000–90,000 from Tam Coc to Ninh Binh City.

Vegetarian options: Ninh Binh has a significant Buddhist population and several vegetarian restaurants, particularly around Bich Dong Pagoda. Look for signs reading “An chay” (vegetarian eating). Rice dishes, tofu preparations, and vegetable stir-fries are always available.

Pricing reality check: Tam Coc is a well-trodden tourist corridor and prices are adjusted accordingly. A bowl of pho that costs VND 45,000 in Ninh Binh City might be VND 75,000–90,000 in Tam Coc. Walk one lane off the main road and prices drop significantly.

Water and drinks: Bottled water, coconut water (VND 20,000–30,000), and sugarcane juice (nuoc mia, VND 15,000–20,000) are all safe. Tap water is not.
